This is a double layer earl grey cake, with a vanilla & earl grey filling. The trim is dark-chocolate covered nuts, and wee gold embellishments. I used my earl grey cupcake recipe, I tripled the batch and made REALLY strongly brewed loose-leaf earl grey!

Chocolate coconut cookies.

Chocolate Coconut Cookies

This badass recipe makes a little over 2 dozen cookies. Out of the 27 cookies I baked, I managed to hide ONE in the fridge, a hungry uncle will indeed follow his nose. The other 15 er so were portioned out to 3 very good friends of mine. It has been 48 hours, the cookie remains super fresh and highly sought after, kinda like the master baker 'ere.

A few hours had yet to be killed before visiting a good friend of mine. I had decided to bake him and his grandmother a tall 6" round cake. As I pondered an appropriate texture and flavour I put my old lady cardigan and cringed as I looked outside. Hotter than hell out, it was, and I very much wished it could just be late summer/early Fall already. With an infant-like allergy to bug bites, the stubbornness to not see a doctor, and an extremely pale, tattooed exterior; I very much get anxious when my city gets humid & 35'C+.

That being said, this recipe is good for either 12 muffins or one 6" round (3" tall). Whichever you choose, keep in mind it's a swift idea to "butter" and flour your pan.

Iced tea.

About once a year the family and I head to Grand Forks to stock up on frozen vegan entrees/burgers, cheap vinyl, and sultry unmentionables from Victoria's Secret. I specifically remembered the first time I had encountered REAL brewed, unsweetened iced tea.. I was 10, we were at a Mexican resto, and I was essentially eating beans, rice, and corn with hot sauce. The moment that thick glass of overcast hit my lips I instantly spit it right back in the glass. It was one of those "THIS COKE'S GONE BAD!" moments. My grandparents were slugging it back, and I figured it was because they had either a) lost all taste after eating that green taco sauce, or b) filled it up halfway with some Southern Comfort. Slowly, I ate my meal, glaring at this glass of ball sweat, almost waiting for it to get sweeter with age. Finally I piped up. "Grandma? My iced tea tastes like piss." The jolly German lady that my grandma is, explained to me this is how the 'MERICANS do their iced tea, and that we could go nab some Nestea or Brisk instead, to make sure I'd begin developing my cavities at a young age.

Years later I figured I should make my own iced tea. What I thought was going to be difficult turned out to be a huge facepalm-er. Fellow Canadians and international shut-ins.. here's a basic recipe for homemade iced tea.
